The Capocollo or Black Pork Cup of the Nebrodi is a fine salami with excellent organoleptic characteristics thanks to the quality of the meat of animals raised in the semi-wild state fed with broad beans, barley tubers and acorns
It has a bright red color typical of these meats and is aged at least 4 months in natural sandstone cellars.
Intense aroma reminiscent of the undergrowth and very persistent and aromatic savory taste.
