Description
Hard cheese made of raw sheep's milk. The Pecorino Siciliano D.Or.P. it is the oldest cheese produced in Sicily, cylindrical in shape, with flat or slightly concave faces; crust of yellowish white or straw color tending to brown with the protracted seasoning, the surface is wrinkled for the shaping left by the basket; paste of white or straw color, compact with poor holes.
