Piacentinu Ennese



Aged cheese with pressed paste obtained from sheep's milk, whole and raw, processed within 24 hours. The milk is brought to cooking temperature and transferred to the tina (wooden container) inside which saffron and rennet are added. The shape is cylindrical, the crust soft and elastic, the smooth paste of more or less intense yellow color, due to the presence of saffron, and with slight holes.
