The Prince of Calatari is an excellent salami of lean meat where much of the lard is replaced
from Ragusano Dop
Pasture-raised Cinisara cow meat is chopped to coarse grain and the cheese cut with a knife
It has a purple red color and is aged at least 30 days in natural sandstone cellars
Complex aroma and intense aromatic taste with spiciness determined by the aged cheese.
