Description

Short-aged lean dairy with a soft straw yellow color. Product obtained by surfacing (at high temperature, about 90 ° C, with agra or citric acid) of cow's whey proteins, with the addition (about 10%) of raw whole cow's milk. The cheese is aged in special sandstone rooms for a maturing period ranging from 60 to 90 days.
